    Resep Botok Teri Mlandingan

    BOTOK TERI MLANDINGAN (ANCHOVY IN BANANA LEAVES)
    INGREDIENTS:
    • 500 gram coconut, grated
    • 150 gram mlandingan (horse tamarind)
    • 150 gram Medan anchovies
    • 100 gram melinjo leaves (gnetum gnemon), cut
    • 3 large red chillies, sliced
    • 2 large green chillies, sliced
    • 7 shallots, sliced
    • 3 cloves garlic, sliced’
    • salt to taste
    • 1 teaspoon palm sugar, grated banana leaves, to wrap toothpicks

    1. Blend well grated coconut, mlandingan
    (horse tamarind), anchovies, melinjo leaves
    (gnetum gnemon), red chillies, green chillies,
    shallots, garlic, salt, and palm sugar.
    2. Take 2 tablespoons anchovy’s mixture. Place
    it in the center of clean banana leaf and pleat
    inside. Repeat on other side. Fold one end
    of pleat to the front and the other to the back.
    Repeat on other side to firmly enclose contents.
    Secure with a toothpick. Steam for 30
    minutes until done.

    Makes : 15 servings

    Resep Sweet Sauce Chicken

    INGREDIENTS:
    • 1 chicken, cut into 8 parts
    • 3 salam leaves
    • 2 1/2 cm greater galangal, pound
    • 100 gram palm sugar, pound
    • 1 part tamarind pulp
    • 300 ml coconut juice
    • vegetable oil, to fry
    SPICE PASTES:
    • 1 teaspoon coriander, fry dry
    • 3 candlenuts, fry dry
    • 5 shallots
    • 3 cloves garlic
    • 2 1/2 cm ginger
    • salt to taste
    1. Grind or blend the spice paste ingredients.
    Put chicken, salam leaves, greater
    galangal, palm sugar, tamarind pulp, and
    ground spice paste together. Add coconut juice.
    2. Stir well. Cover and cook chicken on
    low heat until done and the spice are fully
    absorbed. Remove from heat and let it cool.
    Heat vegetable oil. Fry chicken until golden
    brown. Serve while still hot.

    Makes: 8 servings
    *) Note : Chicken can be substitute with Ternpeh or Tofu.

    Resep Sambal Goreng Tahu Telur Bumbu Petis

    BAHAN :
    ► 10 Tahu goreng [beli di asia store, fried tofu].
    ► 7 telor rebus [atau sesukanya], goreng sampai kecokelatan.
    ► Petai kira2 5-10 biji.
    ► 5 shallots, iris tipis.
    ► 5 garlic, iris tipis.
    ► 15 cabai rawit, iris-iris.
    ► 1 red paprika iris-iris tipis.
    ► 1 sereh, geprek.
    ► 1 lengkuas.
    ► 2 daun salam.
    ► 5 daun jeruk.
    ► Sedikit asam rendam air.
    ► 3/4 kaleng coconut milk.
    ► Kaldu ayam.
    ► 2 sdm petis ikan.
    ► 1 sdm terasi bubuk.
    ► Garam, gula.
    CARA MEMBUAT SAMBAL GORENG TAHU TELUR BUMBU PETIS:
    ► Tumis shalots, garlic, paprika, rawit, sereh, terasi, daun salam,
    daun jeruk, lengkuas, petai, masukan kaldu ayam, air asam, petis,
    garam, gula.
    ► Masukan Tahu dan telor goreng, masak sebentar, angkat!
